They are quick, easy and they're gluten free!
If you are craving chocolate or needing to make a dessert fast, this recipe is for you! The ingredients and prep are simple and use only one bowl. The frosting is easy too with just a couple of ingredients. The fact that this recipe is gluten free makes it a healthy choice for your family and perfect for those who are celiac. The best part...you won't even know they are gluten free. In fact, we have made them with regular flour, and they just aren't as delicate and moist.
As long as you have all of the ingredients, you can have these cupcakes ready to serve in under an hour!
List of Ingredients
Batter
1 Cup gluten free flour (any 1 to 1 flour will do)
1 Cup sugar
1/2 Cup dark cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 Cup milk
1 Egg
2 tsp vanilla
1/4 Cup oil
4 ounces coffee
Frosting
1 Cup heavy whipping cream
1 Cup chocolate chips
1 tsp vanilla, Kahlua, whisky or bourbon
Process
Preheat oven to 350.
Line muffin tin with liners.
Mix all dry ingredients in a large bowl.
Add in milk, egg, vanilla, oil and stir well.
Add in coffee slowly while stirring.
Pour into muffin tins, filling half full.
Bake for 25 minutes or until cupcakes spring back when touched on top.
Meanwhile, warm cream on stove over medium heat but do not let it boil.
Add chocolate chips and flavoring of choice and let sit for a few minutes.
Whisk cream and chocolate well until very smooth then refrigerate.
Cool cupcakes (in fridge or freezer if you are in a hurry)
Beat frosting until color lightens and volume increases being careful not to over whip.
Frost cupcakes piping bag and tip of your choice.
Decorate if desired. A chocolate covered coffee bean placed in the center of each is a simple and elegant way to do this.
